As winter descends on Green Bay I'm already feeling a sense of claustrophobia. Couple that with the Christmas craziness that has begun and I'm already looking for activities that get us out and about, doing good things and enjoy each other.
Saturday night I asked Chris if he wanted to go out to eat. However, the one stipulation is that we had to go somewhere we had never been and things we had never tried. Remembering a review of a Vietnamese restaurant I read a few months back I suggested we go to #1 Pho. It's a little inconspicuous, authentic Vietnamese restaurant. So we did. Here's what our meal consisted of: Chris had vermicelli with marinated beef tenderloin and shrimp paste wrapped in bean curd skin and an egg roll. I had a shrimp and bean sprout spring roll and Jackson and I shared the seafood chow fun. Sounds different doesn't it? It was, but it tasted amazing! I would recommend this place to everyone to try at least once.
Jackson took a photo of Chris and I at #1 Pho.

Friday night also consisted of our annual bell ringing for the Salvation Army. This was especially enjoyable because we meet some great people, help people in need and enjoy being out as a family.
I try hard to instill in Jackson a sense of appreciation for what he has and how blessed he is to have it when others are less fortunate. Slowly but surely the concept is sinking in, over time I'm confident he'll truly understand.
My Mom invited me to a "Wrapping Up the Holiday in Style" brunch put on through her Church. So on Saturday morning I found the most festive Christmas shirt I had, which was simply a red one, and off I went. It was a great event with hundreds of people. I enjoyed the fashion show and fashion tips from the wonderful speaker they had. It was great to be in the company of my Mom and her friends, they're really a fun group. Thank you Mom!
