Oats, Peanut Butter and Ice Cream

No, we didn't eat all these items in one night : ) The title references experiences from the week, minus a children's music concert we attended at the GB Botanical Gardens, I'll post those photos another time.

The oats are referring to the Cheerios Jackson was hauling around in his tractor wagon. The dogs followed him around for what must have amounted to hours this week as he played 'farm' and fed his animals 'grain'.

The peanut butter is referring to EASY peanut butter cookies Jackson helped me make (and eat!) this week. The recipe: 1 C peanut butter (chunky or creamy), 1 C sugar and 1 egg. Bake for 10-15 min @ 350 degrees. That's it! I 'healthified' the recipe as follows (tasted excellent): egg substitute, Splenda-Sugar Blend and low-fat PB (Mike used the low-fat PB and said it turned out perfect).

The ice cream is referring to a special treat we indulged in one evening. We headed to a popular ice cream stand near the Fox River (Zesty's - try it!) and then walked to the docks to enjoy the view and beautiful night. Jackson loved the ducks, boats, water, etc. It's so easy to entertain him; everything is fascinating from a child's perspective.

So, are those cookies baked in a pan or drop cookies? I still think it's easier to eat a spoon of pb!
